Lilium

The Gerber Group has 20 years of nightlife under its belt, mostly under the roofs of some pretty fancy buildings: the Time Warner Center, Trump Parc, and several W Hotel locations here in New York and as far away as Chile's capital, Santiago. The latest addition to the portfolio is more of a remodeling, as Underbar -- located under the W Union Square -- becomes Lilium. The plush upholstered booths with curtains are gone in favor or a more open format of low-slung black couches curving throughout the bar, beneath a ceiling of lilies hand-made from black steel. Cocktails buck the trend of sophisticated mixology (but not price -- they're $14) in favor of simpler creations like the black lilly [sic.] (vodka, blackberry juice, champagne) and the jack rabbit (applejack, orange juice, lemon juice, maple syrup), in addition to a solid list of bourbon, Scotch, and the usual bottle service suspects. Fries, flatbreads, cheese and other snacks are available courtesy of Olive's on the hotel's ground floor.
