... The Green Deacon, on the other hand (pictured), is made simply from Plymouth Gin, sloe gin, grapefruit juice and St. George Absinthe. In both cases the absinthe rinse is applied via two sprays from a squirt bottle into the bottom of a small cocktail glass before the glass is filled. And, again in both cases, the rinse offers a smart compliment to the citrusy, crisp refreshment. ($13)
Verdict: 5 stars. Innovative flavor layers unite deliciously in both drinks. Extra points for deftly and subtly managing the absinthe's flavor instead of just using it for name-dropping purposes.
