The Dove Parlour | The Green Fairy

The cozy and Victorian-themed Greenwich Village bar (an idyllic cold-weather escape, notable for its lack of belligerent twentysomethings) serves a tasty Green Fairy: absinthe chilled and shaken with fresh mint, then diluted with sugar and water. While it may sound similar to traditionally prepared absinthe, the combination of mint and the chilled absinthe makes for a decidedly smoother drinking experience. Although the pairing of mint and anise might, in some cases, prove overwhelming, here it's nicely balanced. ($15)
Verdict: 4 stars. A unique take on the traditional that emphasizes the anise flavor while complementing it with a minty kick.
