Bazooka Martini | Tailor
As the name implies, Bazooka bubble gum was the first agent that mad scientist, er, mixologist Eben Freeman infused vodka with to create the bubble gum cordial for this fanciful martini. But it’s actually Double Bubble chewing gum whose powdery exterior provides the dry, chalky taste that cuts the sweetness of the drink. Freeman combines the overnight infusion with a house-made sour mix that gives it acidity and a sour tang for balance. “If you’re a wiseass bartender like me, green apple martinis are basically bubble gum drinks," he says. "Kids come in for bubble drinks, so I thought, ‘If they want bubble gum drinks, I’m just going to give them a bubble gum drink.’” Despite its snappy pink color and girly appeal, Freeman insists it’s a drink everyone can enjoy. “It’s the idea of being connected to childhood memories. Even big guys like David Chang [Momofuku] and Josh Eden [Shorty’s .32] come here and drink this because it touches a part of you.” ($13)
Candy credibility: 5 stars. You’ll feel like you’re chewing bubble gum, and that’s before you even take your first sip, thanks to a distinctly strong bubble gum smell. Unlike Bazooka and its brethren, the flavor lasts long on the palate.
