Jane | The Fling
Though few cocktails claim a permanent spot on the menu of this modern American restaurant, this muddled mojito-esque drink successfully transitioned from being a “Spring Fling” to a full-fledged "Fling." While most other cocktails use elderflower to build upon the character of another spirit, general manager Jeff Blath uses ingredients to build upon the qualities of the elderflower itself, starting with Jane’s house white wine, a French Sauvignon Blanc. “It’s always been something I’ve associated with elderflower but in reverse, especially in the nose—there’s a floral quality.” Tarragon and lemon are muddled together for a subtle herbal taste and balance the sweeter, floral notes, while vodka gives it some kick. The crisp, mellow mix is served in a high-ball glass and topped with a spritz of club soda for a bubbly effervescence. (Price: $11)
Verdict: 3 stars
Refreshing and citrusy, each of the ingredients plays off one another for some smooth sipping. Just watch for the walk-off, which can be a bit pungent.
