Considering his pedigree, it's no surprise that dessert guru Pichet Ong (Jean Georges, Tabla, Spice Market) would create a cocktail that resembles liquid candy. In a riff on the Bellini, Ong pours Italian prosecco (already sweeter than most bruts) over syrupy elderflower cordial and Lebanese rose candies in a champagne flute misted with edible 23-karat gold. “When you take a sip, your lips get all glittery, so it’s very sexy,” says Ong. It’s also elegant to sip, making it a seductive first-date drink. Though the cordial and candies rest, unmixed, at the bottom, the prosecco bubbles distribute the sweetness as they fizz to the top. In this case, the elderflower lends a textured undertone, binding everything together and elongating the flavor of the normally dry prosecco on the palate. (Price: $12)
Verdict: 4 stars (out of 5)
Light and lively, with an elegant presentation. It might, however, be too sweet for some tastes, especially as you get the closer to the bottom.
