Upscale French brasserie Perle puts a modern twist on the classic drink with a frothy balance of crème de fraise topped with chilled champagne. Despite its opaque pink color, the cocktail is light and dry and showcases the champagne beautifully, with the crème de fraise lending an acidic bite while drawing out the flavor of the strawberries floating on top.
