Oh Snap!
After bygone rumors of absinthe causing hallucinations, blindness, madness and worse, and decades of being an illicit and illegal spirit to be purchased only in places like the Czech Republic, absinthe has been steadily making a comeback. Last night, underground supper club, A Razor, A Shiny Knife, hosted an event featuring Pernod Absinthe—Razor head Michael Cirino crafted a decadent four-course meal and cocktail pairings with the spirit woven in to every element of the meal. How do absinthe steamed artichokes sound? Or an absinthe glazed pig head? We say delicious!
Cocktails were brilliantly mixed by celebrated French mixologist, the London-based Charles Vexenat; who better to balance the heady notes of anise than a Frenchman. He started out the evening with a tart and fizzy absinthe punch and guided us all the way to the holidays with a rich holiday cocktail with notes of coffee and nutmeg.
