Roberto Passon is known for his work at some mid-tier Italian restaurants in Midtown, but now he's trying to enter the big time. The wine bar big time, that is. Aria stands apart from other West Village wine bars with its cocktail list. Libation selections are displayed on a chalk board, along with their creation date (who knew that a Pimm's Cup was so old?). The design of the space is like Schiller's Liquor Bar light—Passon admits that he took some cues from Keith McNally, with his white-tiled bar and casual jumble of tables. Judging by this spot, Passon has another passion: women. The labels on the list are from female winemakers only. Does a woman's touch mean better wine? You'll just have to drink more to find out.
