His latest: Vietnamese spot D.O.B. 111—the name is inspired by his date of birth, Nov. 1. The food, though, is inspired by France: kaffir-lime duck confit, tamarind-tuna tartar, Japanese mountain yam soup with frog's legs. They're available a la carte or as a $29.95 prix fixe. As we typed that last sentence, we bet Michael Bao Huynh just opened another seven restaurants.
