Stephen Hanson has swapped one Asian restaurant for…well, another Asian restaurant. The mega-restaurateur has turned his massive, 200-seat Japonais space in Gramercy into Kibo Grill, which, like the former, will have an Asian menu with an omnibus bent—this one skews predominantly Japanese, with a few mini detours to Korea and China. You'll find designer sushi and rolls (i.e. lobster with shrimp tempura and crispy bananas), plus noodles (seafood lo mein) and rice (veggie bibimbap). There's also a robata selection for your DIY grilling fix—you can grill up everything from scallops to Wagyu. The clincher here, though, is Hanson's high-wattage collaborator: Michelin-starred French toque Joel Robuchon is consulting on the menu.
