Chinatown goes to bed early, so this new booze-and-burgers operation should be a boon to the area's night owls. Run by the brothers who own Whiskey Town, it has the same stripped-down feel, down to the grub: a cheeseburger, egg sandwiches, assorted fried goodies, plus a Hostess cupcake (of the plastic-wrapped variety—no BS here). They’re earnest about promoting American whiskey like the ryes and bourbons from Michters and Frisco brewery Black Maple Hill, but co-owner George Ruotolos says they don't want to be seen as a specialty bar. His ambition is to run a place where "the drinks are well poured, on the strong side, and reasonably priced, and the bartenders are bartenders, not musicians."
