A one-time neighborhood deli has been given the wine-bar treatment by owners Neil Lizardi and Carlos Carela, who are born in New York, but turn to their homelands of Puerto Rico and the Dominican Republic respectively for influence. The name references Spanish sparkling wine but also a subterranean wine cave; the space reflects the two with a New York subway-ish look and a wine list that spans the globe. The fare is Latin American–style, with dishes that include Carela family favorites such as a lamb meatball accented with cumin, garlic, mushroom and tarragon served atop a yam puree.
