Ten's the magic number at this ultra-select Tribeca eatery, which will be seating only 10 people to sample its 10-course tasting menu that changes regularly. (Wait, is that an echo we hear? "Momofuku Ko … Ko … Ko …") Natch, expect a feeding frenzy when it comes to reservations, which will only be taken via Open Table. The chef, Nick Curtin, has a pretty unassailable pedigree: He recently trained with Renee Redzepi at Noma (aka The World's Best Restaurant), and at Compose, he'll be plating up refined nibbles like foie gras with black pepper chocolate and razor clams in an almond-and-green-tea-oil broth—for about $120 a head (plus an extra $80 for booze pairings). Can't score a spot for the tasting menu? The restaurant actually has 20 other seats for a la carte dining, offering a limited menu of bar bites—think duck-fat popcorn and seared scallops with apple and bacon. Those seats are available day-of, and you'll need to call the restaurant to snag them.
