Proving that every bit is worthy to bite, this inventive izakaya is putting together a meal built on the scraps that didn’t make the cut the first time. Bones, fish heads, scraps of waygu beef, vegetable peels and the like will come together on the first Saturday of every month to form what is known as “makanai”—a Japanese kitchen tradition that both demonstrates cooking skill and a wise use of inventory remainders in feeding the staff. However, in this case, you and your fellow patrons can pay $45 to partake—and better yet, those down with the recycling also get all-you-can-drink Sapporo beer to boot.
