With its big windows and long wooden tables, this wine bar and restaurant on the border of Prospect Heights hopes to draw eco-minded neighborhood locals. The menu certainly has a unique bent: The drinks focus on "slow wine," or wines made as naturally as possible from traditional winemakers and newer, greener outfits as well. The food, from a former Prune chef, is vaguely French comfort, with rotating dishes like brisket and tongue with salsa verde ($10) and rabbit stew ($18). It's currently only open in the evening, but plans are underway to extend daylight hours and make better use of a vintage espresso machine serving 49th Parallel beans.
