Here’s one you don’t hear everyday. New NYC chain Rockwells Express will focus on two things: USDA Prime burgers and sustainable food-waste reuse. This new fast-food joint, which also plans a location in Yonkers, will open in the former Rickshaw Dumpling Bar space near NYU. The chain hopes to feature a state-of-the art bioreactor called the “Orca Green,” which aerobically digests food waste and corn-based wrappers, cups and other packaging and turns them into liquid slurry. There could be some delays, though, since the Orca Green remains controversial because of processing issues at already overloaded sewage plants.
