Navas loves going to food festivals. “We try to do them all,” he said. Literally standing behind his dishes, Navas enjoyed the chance to chat with his customers and explain the finer points of SushiSamba cuisine. Navas is a native Argentinean, making him the perfect person to channel SushiSamba’s Japanese–cuisine–by–way–of–South America. “The Japanese community in Sao Paulo is the second largest outside of Japan,” he said.
