The folks at SushiSamba put out a sampler of yellowtail tuna in a delectable sauce. “It’s a tom yum base,” explained executive chef Fernando Navas, “Then we put some oil, garlic and maybe some sashimi.” One small taste and it’s very clear—tom yum is right.
