Chef Lo traveled extensively in Southeast Asia, and everywhere she went there was some sort of grilling tradition. In Korea and Vietnam, street food is cooked over an open fire, and in the Philippines, vendors cook on grates over industrial metal garbage cans filled with hot coals. The bar Q menu reflects all these influences with upscale and inventive twists, like this pork “wing” with a spicy chili sauce.
