Since I’ve heard that real barbecue aficionados forgo sauce, I asked Pete for his take on the debate. He feels that if you’re using good quality meat and a nice rub, the finished product will already have plenty of flavor. But if you want to appease sauce fanatics, a chipotle or any earthy chili sauce will complement the meat well. And when it comes to the right drink to wash down a plate of ‘cue, Pete reaches for a cold Corona.
