Another one of Hill Country’s specialties is their beer-can chicken—familiar fare to frat guys and NASCAR fans across the country. But when you’re pumping out the quantity of hens these guys are, you need a more efficient model.
This 12-bird custom model has refillable stakes that take the place of the traditional can. Filled with beer, the same interior steaming effect gives the cluckers a nice moist interior. Unlike Pete’s beef and pork, the chickens get a celery-seed-and-brown-sugar rub since they don’t take well to salt and pepper.
