Amused by the digital voice recorder, Joey noted that when he previously worked as a corporate hotel chef, some of his unionized employees would secretly record their conversations—and send the tapes to HR. "I would have meetings with HR and they told me that I had said fuck seven times in a sentence," says Fortunato. "So I decided to play the same game, recording all my conversations with [management]." Jurgensen writes about the hotel job being one of her most challenging—particularly devastating was when the restaurant was passed over for review by the New York Times.

Did it drive you to drink?
Dalia: For me it caused less drinking, because it was so horrible. I worked more hours at that job than any. I was too tired to drink.
Joey: I just drank all the time. More of less? I don't remember more or less.
