His grandmother’s love for the flavor of cranberry sauce out of the can is the inspiration for the cranberry gelée he is serving at Perilla. “She would spend all day making cranberry sauce from scratch and then add gelatin to it and put it in a mold so it would look and taste just like the stuff out of the can. I did the best of both worlds. I made a cranberry gelée , but there will be chucks of cranberry inside.”
