Dieterle, who is of Italian heritage, says that before digging into turkey, stuffing and sides, Thanksgiving with family on Long Island begins with pasta. He’s not, however, putting pasta on his menu at the restaurant, keeping it traditional with roasted turkey, chestnut stuffing, fried turkey skin, marshmallow-crusted sweet potatoes and crunchy Brussels sprouts leaves.
