Sueños' chef explores the city's Mexican soul in Corona, Queens
At a typical Mexican joint in the neighborhood, tortilla making begins early in the morning with the batter. “I would say that bucket is going to make between 300 and 400 tortillas throughout the day," she predicts. "It’s a craft that is learned over time, passed down from generation to generation. In a family of girls, everyone has different roles. You’re learning a craft.”
