Last June, the James Beard Foundation confirmed what Café Boulud regulars had known since last year when it honored Kaysen with its Rising Star Chef of the Year Award. The 28-year-old San Diego import began his winning streak in 2007 when Boulud made him the restaurant’s executive chef and Food & Wine named him 2007’s best new chef. Further proof of Boulud’s excellent instinct came this January, when he branched out into the welcoming Upper West Side with Bar Boulud, a casual wine bar celebrating the meaty cuisine of Lyon.
