We also sample an al pastor: chili-and-spice-marinated pork cooked on a spit and shaved off like shawarma (apparently, some Lebanese landed in Mexico in the early 1900s and shared their practice of shaving loaves of meat). El Paso appears spitless, but our finely chopped, griddle-cooked pork is bold with spice, again topped with cilantro, onion and spicy salsa verde, and laid in two perfectly soft corn tortillas—visually, a major improvement over the tongue.
