Gadbaw, an Alto veteran, here assembles the sea bass crudo under White’s watchful eye. The perfect square of fish is composed using a metal guide that resembles a cookie cutter. Marea will import about a third of its fish from Italy, a third from Hawaii, and the rest from around the world.
