Tilapia, which Sosa considers colossally underrated, is the fish on offer here. He loves the texture, and boasts that the turmeric treatment—caramelizing it for a couple minutes on each side after it’s been basted in the sauce-spice mix—transforms the fish. Having typically been snobs about tilapia, we reserve judgment.
