“We’re probably the greenest restaurant in the world,” says owner Alberto Gonzalez. Okaaaaay, a bit preachy—there's a sign in the window reading, “Sustain ability.” But their commitment is impressive: It was the first certified organic restaurant in New York.
Mantra: Local. Nutritious. Recycled. Eco-friendly. It’s all laid out on their Web site.
Habitat: According to Gonzalez, “We built the whole place using recycled materials and no chemicals. We recycle and compost, we have organic uniforms, organic flowers, green-cleaning practices, green pest control.” They also use solar lighting, wind power and energy-efficient appliances.
Sustenance: The country’s first restaurant to use 100 percent USDA-certified organic ingredients. The food is a healthy mix of Argentinean, Italian and American ingredients purchased from local farms whenever possible.
Hydration: Recently opened the first certified organic bar anywhere, serving fruity cocktails, smoothies and coffee drinks. All water comes straight from the tap; it’s sterilized with UV light and run through a purification system to remove toxins and metals.
Wild card: Provides woven hippie bracelets to guests symbolizing support for the organic cause. With Phish touring again, you could totally trade it for weed in the parking lot.
