Worst kitchen incident witnessed?
I had a cook who was roasting lamb bones in the oven in a huge roasting pan and they were really sizzling and hot as shit with all the oil bubbling. And at the time we were deglazing our lamb bones with armagnac and she leaned over and poured the armagnac over the bones and POOF it blew up in her face and singed off her eyebrows.

Did she continue working?
I wanted her to but she decided to go home. So I fired her [laughing]. I let her go. Yes, I am kidding.
