What was your first restaurant job?
My first job was a dishwasher at the Sheraton in Hazlet, New Jersey. I won the golden sponge award for the Jersey Shore. In New York, my first job was working for Daniel Boulud at the Hotel Plaza Athenée in 1984. I learned to work fast and keep my mouth shut.
