What chef would you love to hire?
I can pick any chef in the country?
Anyone in the world.
I’m going to have to go with Jonathan Waxman. To me, he’s the greatest chef in America.
What makes him so super?
It’s extraordinary the way he brings the farm to the table. He’s inspired a younger generation of chefs like me to work with farmers and cook sustainably. I think he’s as good as they get.
