If you had to make a fabulous dessert incorporating bacon, what would you make?
I’ve already done this! On the Iron Chef I made bacon ice cream with fresh blueberries and a crumble on it.

What was your first New York restaurant job?
It was at Arcadia with Anne Rosenzweig. I was the lead sauteé chef in 1994. I can’t think of a more wonderful experience to start with.
