Over the next few months, we will be posing one essential question every week to some of our favorite New York City culinary pros, including Ryan Skeen, Leah Cohen, Joey Campanaro and Christina Tosi. It's not a burning question. Chefs don't do burning. But it will introduce you to a side not usually covered by the food press: a revealing, sometimes awkward, always honest side to these chefs, who we assume are sick of talking about their favorite kitchen gadgets. We get it, robocoups are neat.
