Chorizo Pigs in a Blanket | Walter Foods
If the last time you had pigs in a blanket was off a catering tray sometime back in the '80s, then you and Justin Ernsberger are on the same page. "We were brainstorming forgotten favorites from the trans-fat golden age," recalls the chef at Walter Foods. "I thought of cocktail parties my mother used to throw, and she always made killer pigs."
The lowdown: Times and taste buds have changed—somewhat. To modernize the retro-inspired appetizer, Ernsberger uses a mildly spiced Mexican chorizo, which he encases in flaky puff pastry and layers with a generous sprinkling of cheddar cheese. A piquant Romesco sauce carrying forth hints of smoked pimento and toasted almonds is a welcome addition to the updated classic—just don't let mom see you double-dip.
