When Michael fired up his electric pasta roller, I felt like an embarrassed LG user watching his friend whip out an iPhone 3G. But since I'm not turning out 20 pounds of pasta a day, I'll stick with my $50 Imperia hand-roller, rather than break the bank with one of these $5,000 bad boys.
Michael fed only a third of the original pound of dough through the rollers. After each trip through, he'd rotate folding the pasta in half vertically or horizontally. After eight times through the machine on a wide setting, he set the rollers closer together, which created a longer, thinner result. He tightened the rollers once more and repeated the process.
