The final leg of my pizza marathon found me in Carroll Gardens at upstart, critically acclaimed, Jay-Z–feeding Lucali. I knew that owner/chef Mark Iacona would be sympathetic to a pizza novice like me. Mark’s a neighborhood guy with a construction background who started throwing pies less than two years ago. He admittedly had only three days of practice cooking in the brick oven that he built himself before he opened for business. Needless to say, Mark’s no stranger to trial and error himself, and since he quickly became the newest darling of the tough Brooklyn pizza scene, perhaps a little of that magic would rub off on me.
