Because Otto is in a landmark building, they aren’t zoned for a full-fledged brick oven. Instead, they employ a unique method of cooking their pizzas on a flat top grill at 425 degrees for eight to 12 minutes, before finishing in a salamander to really give the toppings a nice char.
