After watching Dough Doctor Sim work his magic, we paired off into student teams to try our hand at kneading. For two medium-sized pizzas, we started with a pound of dough—made simply of water, flour, yeast, salt and olive oil. The olive oil is a must for relaxing the gluten so the dough will cooperate come stretching time.
