Chef Sim cut his teeth as a pastry chef in London before moving to America and eventually becoming head baker at Balthazar’s large-scale baking facility in New Jersey. Fittingly, this bread man considers proper dough the most important element of a quality pizza—a sentiment echoed by the next two pizza chefs I visited as well. Here he demonstrates the proper kneading technique of always folding towards the dough’s middle. I was impressed by his one-handed kneading skill…but as they say, learn to walk before you run.
