My first stop on the road to perfect pizza was a Friday night “Best Homemade Pizza” class at the Institute of Culinary Education. Here I hoped to get a basic understanding of all aspects of the process—from dough and sauce to toppings and heat. Our fearless leader, Chef Sim Cass—a cross between Robert Carlyle and Captain Jack Sparrow with boundless enthusiasm and quick wit —made the learning process go down like a slice of piping-hot Lombardi’s.
