Do you feel depressed or have you moved on already?
Oh, I had three years to go through the stages, so I’ve been in acceptance for a while.

Any plans for a new location or a new venture?
I don’t want to operate and manage a restaurant, but I’m talking to people who might be interested in licensing Florent. So yes, it would be interesting to take the concept of Florent on the road—maybe Miami, maybe Vegas or Rio, who knows!

What do you think about the changes that have taken place in the 20-odd years?
New York is about change. I came here from my small town in France because there, it doesn’t change. You know, I would be dead by now over there, either by alcoholism or suicide. I must say I’ve been asked what I think about how the neighborhood is now and I don’t really like it, but there were times in the early ‘90s that I liked this place even less.
