You are from Italy and teach Americans how to make Napoli-style pie. What are the key elements?
We teach the pizza maker how to make authentic pie, because the pizza maker is the most important part of the process.
What type of oven to you use?
A wood-burning oven. You put in the oven for a minute and a half and that’s it. Naples has 2,500 pizzerias and none burn coal.
What is your favorite New York pizza?
This place Trattoria 089 in the Bronx. The pizza maker is from Naples and uses very special flour.
