The formality’s a little dated and wingman Andrew Carmellini has flown off to build his own culinary fleet, but the degustation at this top French spot remains just as magnifique as when ex-Le Cirque master chef Daniel Boulud first opened the 1930s homage to his Lyonnais roots a decade or so ago.
