The times they are a-changin’ and Silvano Marchetto has taken notice, swapping his six-year-old informal Tuscan trattoria, Da Silvano Cantinetta, for this even more casual, affordable meat-laden lair. Eschewing the white tablecloths of the original Italian eatery next door, Da Silvano 2.0, with its well-edited menu, encourages you to get down and dirty with juicy grass-fed burgers and steaks. For more adventurous palates, there’s a bison skirt steak, lamb ribs and Rocky Mountain oysters done goat-style (there’s also the regular kind by the half-dozen). Potato croquettes rather than fries pair with your beef, and there’s homemade ketchup for dipping.
