Expanding his empire of eateries in the Financial District, Frank Casano, part-owner of Harry’s Steakhouse, Ulysses and Adrienne’s Pizzabar, continues to give square slabs of pizza an upscale twist with this latest venture, which focuses on Northern Italian cooking while dabbling in some Sicilian influences. Casano, who’s a resident of the Ritz-Carlton next door, sent former Nelson Blue chef Eric Lind to Tuscany for a month to study up on the region’s latest dining trends, and it shows in such dishes as warm tuna belly with white beans and olive oil and lasagna Bolognese made with a traditional béchamel. In addition to the same 10-inch pies sold at Adrienne’s, there are also 16-inch Grandma-style pies which can be topped with basil, pepperoncini, artichoke or guanciale, plus pasta dishes like pumpkin tortelli in brown butter and sage and spinach ravioli that were noticeably missing from the former pizza bar’s menu.
