Williamsburg gets its own upscale Neapolitan-style pizza parlor—and an enormous wood-burning oven—courtesy of Belgian-born, French-trained chef Mathieu Palombino, late of BLT Fish and Bouley. In the spirit of his erstwhile training, the use of premium ingredients, like Sicilian olive oil, San Marzano tomatoes and superfine "double-zero" flour, prevails in such traditional menu items as pizza margherita, marinara and three varieties of pizza Bianca. It’s in the more inventive iterations (namely, pizza topped with mussels, fior di latte, tomato and basil) that his Belgian background comes into play. In addition to Brooklyn salumi, salads, and assorted olives and cheeses, there's espresso, coffee and pastries for a light European breakfast. For dessert, expect over 10 flavors of homemade gelato and sorbetto, served on house-baked brioche.
