Union Square Café vet Emma Hearst debuts with a Piedmontese menu based on her recent tour of the region. She reportedly stayed several months, until the money ran dry—that’s a lot of gnocchi! The fruits of her travels include an agnoloti of ricotta and walnut pesto, kuri squash risotto, grilled quail with Benton bacon and the most incredible chopped-and-screwed Egg McMuffin, christened pate de fegato—a “fat duck English muffin” is spread with chicken liver and bacon, then topped with an egg.
